Nose
Rich and complex, featuring sweet peat, salt, citrus (lemon/orange zest, grapefruit), fresh grass, herbs, vanilla, eucalyptus, farmy notes, fresh hay, marzipan, smoke, creosote, crispy fish skin, coal soot, lime pickle, olive oil dressing, smoked leather, curry paste, onions caramelising, aromatic, coastal, trawler in the harbour, wet dog, wet hay, aniseed, camphor, fuel oil, oily, leathery, smooth plastic, after-rain in a forest.
Palate
Powerful, with strong but balanced peat, alongside sour citruses, green apple peel, salt, creamy vanilla, peat smoked apple cores, poached pears in salted stock syrup, sooty anise, anjelica, green herbs, creamy, soapy mouthfeel, smoked tofu with wasabi peas, punchy, smoked 'stuff', mint, smoked tea, liquorice, kippers, straightforward, no burnt rubber. With water, it gets fruitier, on dried pears and earl grey tea. Earthy peat, gentle spices, refined minerality, smoky, delicate malty sweetness, burnt caramel, plum skins, tarry, mocha/coffee, tart, tannic.
Finish
Long, gradually drying, with lingering sweet peat, sour citrus, and a touch of tea. More sooty peat smoke, freshness, spice, fruit, anjelica, apples, pears, aniseed, white pepper, lime, elderflower, wasabi, green herbs, lime marmalade. Dry, smoky, liquorice root. Tart, smokey, oily, salty, charred, with a puff of smoke like a coastal bonfire.
